Crockpot Chipotle and Beef Burritos

If you work all day and like to come home to a readymade meal, this easy crockpot beef burritos recipe is ideal. Everything is left to cook for several hours and then ready to serve. You can choose whether to cook this beef burrito recipe on a low or high power, depending whether you are going to be out all day or for only part of the day.

All you need to do to serve this beef burrito recipe is to ladle it on to tortillas and add some garnish. This is such a simple recipe. The chipotle, cumin, oregano, tomatoes and garlic are used to flavor the sauce in which the beef cooks, rather than being served with the tortillas, and because this is a slow cooked recipe all the flavors blend together beautifully. The beef comes out really tender as well.

If you cannot find canned chipotle, you can use chipotle flavored salsa in the recipe instead of plain salsa. The resulting flavor will be very similar. Crockpot Beef Burritos

Ingredients -

6 flour tortillas, warmed
¾ cup shredded cheddar cheese
1 teaspoon dried oregano, crushed
¼ teaspoon ground cumin
1 clove garlic, minced
1 ½ lb boneless beef round steak, cut ¾" thick
14 ½ oz can diced tomatoes
1 onion, chopped
1 canned chipotle pepper in adobo sauce, chopped
Small jar of salsa
Small pot of sour cream

Preparation:

Trim the fat from the beef and cut the meat into 6 pieces.

Place the beef, onion, undrained tomatoes, oregano, cumin, peppers and garlic in a 3 ½ or 4 quart crockpot. Cover and cook on low for 8 to 10 hours or cook on high for 4 to 5 hours.

Remove the meat from the crockpot and shred it with 2 forks. Divide the meat between the 6 tortillas, just below the center.

Remove the onion from the crockpot with a slotted spoon and place on top of the meat. Top with cheese, salsa and sour cream. Roll the tortillas up and serve.
