Char Grilled Steak Burritos Reciepe

If you love steak, then it probably goes without saying that you love carne asada; this Mexican and Tex-Mex on grilled steak makes a wonderful change of pace from the usual grilled steak (although, as it happens, carne asada literally means, "grilled steak" in Spanish).

The typical formula for carne asada is marinated skirt steak or flank steak; the exact ingredients in the marinade may vary from cook to cook, though lime juice, hot peppers, cumin, and cilantro are all common ingredients and appear in this recipe as well. After being marinated overnight, the steak is grilled, sliced thin and then served, usually along with tortillas or as is the case in this carne asada burritos recipe, as burritos.

Since well prepared carne asada is so good on its own, this burrito recipe keeps things pretty simple. The steak is served much in the same way as fajitas, along with bell peppers and onion, though tomato and jalapenos are added here for a little extra flavor and a touch of heat to keep things interesting.

Burrito de Carne Asada

Ingredients -

2 pounds flank or skirt steak
4 large (burrito size) tortillas
2 jalapeno peppers, diced
1 yellow or white onion, diced
1 tomato, diced
1 large green or orange bell pepper, sliced
Olive oil, for sautéing
Salsa and lime wedges, for serving

For the marinade:

4 garlic cloves, minced
1 jalapeno pepper, minced
1 tsp cumin seed
½ cup cilantro, chopped
Juice of 2 limes
2 tbsp white or apple cider vinegar
½ cup olive oil
Salt and black pepper

Preparation:

Marinate the steak overnight in garlic, cilantro, lime juice, olive oil, vinegar, cumin, jalapeno and a little salt and black pepper.

Grill to desired doneness and fold up in burrito-size flour tortillas with sautéed bell pepper, onion, tomato and the salsa of your choice along with lime wedges.
