Ingredients -
1 lb breakfast sausage
8 eggs
1 cup chopped red onion
1 cup shredded Pepper Jack cheese
½ teaspoon black pepper
1 cup chopped green bell pepper
¼ cup cold water
8 warmed flour tortillas, 8 inches across
1 ½ cups salsa
Cooking spray, as needed
1 avocado, cut into 8 long wedges
Preparation:
Fry the sausage in a nonstick skillet until it is browned all over. Use a wooden spoon to break it up into little pieces as you cook it.
Drain it on paper towels and keep warm.
Drain all the pan drippings except about half a teaspoon, and then stir fry the bell pepper and onion in the skillet until tender.
Add them to the sausage.
Wipe the grease out of the skillet with kitchen towels.
Whisk the black pepper, eggs and water together.
Spray cooking spray into the skillet and heat it over a moderate heat.
Add the egg mixture and scramble it for three minutes or until almost set but still a bit runny. Stir the sausage, cheese, onion, and bell peppers into the egg mixture for half a minute or until the egg is set.
Spread the salsa over the tortillas, and then divide the egg mixture between them.
Fold the bottom of the tortilla over the filling, then bring in the left and right sides and roll up tightly.
Serve hot, with the avocado wedges on the side, as well as some extra salsa.
